Healthy Skinny Mint Choc Chip Smoothie Recipe

A healthy green smoothie – made even more appealing by adding peppermint and chocolate chips. Personally, I drink a lot of green smoothies. I love experimenting with ingredients because I find that regular green smoothies can be boring.

Some of my favorite variations include:

  • Hot smoothies – My specialties are an oaty hot chocolate smoothie and a mocha kale hot smoothie
  • Rainbow smoothies – Kids love a good gimmick, but hey if it works!
  • Spiced smoothies – using warming ingredients like ginger or cinnamon

Today I modified the good old kale smoothie with a little retro twist – the Skinny Mint Choc Chip Smoothie.

The base of the smoothie is the classic kale/avocado/banana/milk blend. Then we add a little peppermint extract and top the smoothie with chocolate crumbs. I also like to decorate the inside of the glass with stuck-on chocolate chips for a more playful feeling. The smoothie itself doesn’t taste too chocolatey – you want to do that I suggest stirring in chocolate syrup, or even chocolate protein powder. You won’t get the beautiful bright green color if you do that though!

Here’s what you need for mint smoothie recipe:

Makes 2 smoothies

  • 1 avocado
  • 2 teaspoons chocolate chips
  • 1 cup milk (regular milk, or coconut/almond milk works well)
  • 3 drops peppermint extract
  • 2 packed cups of kale
  • 2 ripe bananas
  • 2 tablespoons dark chocolate shavings

* You can also add 1-2 tablespoons of honey if you like your smoothies on the sweeter side

Step by step preparation:

  1. Cut the avocado in half, remove the stone and scoop out the flesh with a spoon.

  • Prepare the glasses next. Heat a plate and place a chocolate chip on it flat down to melt a little. Now place the chocolate chip inside the glass using your fingers or a pair of tongs. Repeat with the remaining chocolate chips (note: you can also melt some chocolate and dip the chocolate chips into the melted chocolate to put them in the glass if you want).

  1. Put all the remaining ingredients except the chocolate shavings in a blender.

  1. Whiz until smooth.

  1. Pour into two prepared glasses.
